Patate con Riso e Cipolle alla Casamassimese - POTATO, RICE AND ONION CASEROLE - Recipe by Nonna Anastasia Musella from Casamassima |

Ingredients:
White Potatoes sliced thin, Arborio Rice, Onion thinly sliced, Fresh
parsley chopped, 1 large tomato chopped or 2 Italian plum tomatoes
chopped, Olive Oil, Imported Romano cheese.
Directions: You will be
making 2 layers choose size of baking dish accordingly, Lightly oil
baking dish, layer potatoes, drizzle oil, add salt pepper, 1 handful
of rice, onion enough to cover layer, chopped tomato scattered, drizzle
olive oil, 2handfulls of Romano cheese, Repeat second layer, cover with
potato layer and add all ingredients
except rice then add water just until top layer is covered bake covered
@ 425 degrees for 1/1/4 hrs uncover until most of the water is absorbed
and the top is brown to you liking. You can bake this with Pork chops,
Veal chops, or Sausage on top it is very flavorful. Buona Fortuna!!!
